It is posible to intercept the graphic information that a program outputs? [closed]

I'm wondering if it would be possible to run a program, like a game and capture the graphical output information (in the form of a matrix of bits) to being able to process that information and do something with it.

I want to research more about that topic, but I don't know where to start, so any information about the topic will be well received.

Thank you in advance!
